Spanish Omlette
A simple omlette incorporating onions and potatoes, great with tapas or make a larger version to accompany a main meal
Ingredients
4 Eggs
1 Small onion
1 Small potato
Salt and pepper
2 tablespoons of grated cheese

How to make
Beat 4 eggs in a bowl with a little salt and pepper
dice up one small potato and an onion and place to one side
Add the egg mixture to a preheated oiled pan, when cooked around the wedges gently lift the omlette with a spatula so it doesn't stick
Then add the potato and onion to the omlette making sure this is well spread out.
When end the omlette is cooked and no longer runny on top, place a plate over the top of the pan and flip it out onto the pan, then replace the omlette back into the pan to brown the onion and potato side. If you have an oven proof frying pan this can be done under the grill.
