Chocolate Protein Brownies
Gluten Free peanut butter and chocolate brownies
I've never made a brownie before, eaten plenty but decided it was time to have a go and get them on Kimber's Kitchen for everyone else to try.
I decided to make these with protein powder so I could enjoy them as a post cycling treat, mixing wholesome ingredients , supplements and wheat alternatives into a bite size treat was my goal.
Instead of flour in this recipe I used Sweet Potatoes, this adds a natural sweetness to the brownies also the Vanilla Whey is quite sweet so no sugar is needed to be added but these also have the advantage of being Gluten Free!!

- 4-5 Average sized Sweet Potatoes, we need 1.5 cups of mashed potato so think of that when selecting potatoes, any left overs you can refrigerate.
- 1 Cup of Peanut butter, I would recommend Crunchy as it adds texture to the brownies
- 1/2 Cup of Chocolate chips
- 3 Table Spoons of Cocoa Powder (unsweetened)
- 1 Egg
- 1/4 Cup of Maple Syrup
- 1 Teaspoon of Vanilla Extract
- 1 Teaspoon of baking powder
- 1 Cup of Whey protein (this is 60grams) see link at bottom of page to purchase.
- 1/2 Cup of Milk

How to make CHoColate and peanut butter brownies
- IMPORTANT The potatoes have to be baked and allowed to cool before being used in this recipe.
Place 4 - 5 good sized potatoes in an oven proof dish, these need to create
around 1 1/2 cups of mashed potato, so its best to have a little too much rather than not enough! Prick each potato a few times. Add the potatoes to the oven and bake for around 40 minutes until soft when pricked. Set to oneside and allow to cool for an hour or so, I left mine overnight as I had baked the potatoes the night before whilst cooking my evening meal. Top and tail the potatoes and any other hard bits so you don't end up with lumps in your mash

Once the potatoes have cooled remove the skins and and Black bits with a sharp Knife
Mash the potatoes in a large bowl, I used the same bowl I baked them in, saves washing up!

Measure out 1 1/2 cups of the mashed sweet potatoes and add to the food processor
Measure out 1 cup of Peanut butter and add to the food processor. I used crunchy peanut butter as it added a nice texture to the brownies
This ingredient is optional, I wanted to make my brownies high protein, if you don't want the added protein skip this stage and don't add the milk as you wont need the extra moisture

Next add the Cocoa powder, you can adjust this depending how chocolatey you want your brownies, also add 1/2 a cup of chocolate chips
Next add the 1/4 cup of Maple Syrup, this helps add to the sweetness
Add 1 teaspoon of Vanilla Extract

Add baking paper to the brownie tray, this stops the mixture from Sticking and makes it easier to remove the baked brownies.
Pour in the mixture and bake for 25-30 minutes when the mixture is firm. Cut up into bite size pieces and store in a sealed container in the fridge.
