Goats cheese and caramelized onion tarts
I'd won a cheese hamper in a competition from my local butchers Malcolm Michaels Butchers in Leeds (@MalcolmMichaelsleeds on Facebook)they do a great range of meats and a great deli counter with ome lovely cheeses. There was a wide range of cheese in the hamper Stiltons, Cheddars and a few i wasn't sure of.
I'd taken some cheese to my parents on a weekend and put some on my cracker for my cheese and biscuits I thought it was Brie, I was a bit shocked when I got the taste of Goats cheese! I must admit i'm not a fan of the taste but know it changes a lot when you cook it so thought a about a few things I could do with it. The first thing to cross my mind was filo pastry tarts. Goats cheese has a slight bitter taste so thought of ways to add a little sweetness, Bingo! caramelized onions. I'd never made those before either so that was a bit of a challenge too! I made a video to show how easy it is!

You could make these with short crust pastry but I prefer the crispy texture of filo, it's a lot lighter too. These are very simple to make, whilst the onions are cooking you can be preparing the other parts of the recipe.
Directions to make these
Step 1 - If you're feeling lazy you can buy a jar of caramelized onions from Tesco here but making your own is much more rewarding, click on the onion picture above to go to my page on how to make the onions, whilst these are cooking you can start putting together the other ingredients. If you are making your own then follow the instructions on the page to make your on batch if you are using bought ones go to stage 2
Step 2 - In a measuring jug or bowl add 4 eggs and whisk, look at the quantity on the side of the measuring jug and double this by adding milk. My eggs made 200ml of fluid so I added a further 200ml of milk
step 3 - In a quiche tin (or a few smaller ones) add sheets of filo pastry, you can either do this in one big sheet or do like I did and add strips to build up layers this stops the egg mixture leaking out, add a little egg to seal the base then empty any remaining fluid back into the egg mixture
Step 4 - bake the filo for a few minutes to crisp the bottom up no one likes a soggy bottom as they say on the bake off!
Step 5 - Cut up the Goats cheese into chunks, add the milk and egg mixture to the tin(s) then add the goats cheese and finish with a good topping of the onions. Don't overfill the tins or the egg mixture will bake over the top of the pastry.
Step 6 - Put the tin(s) on a baking sheet and put in the oven at 180 degrees (fan) and bake until golden brown and cooked through.
