Potato and Cheese Croquettes
A Simple and delicious potato and cheese croquettes recipe. These can be used with any meal or buffet, served hot or cold. I however love to use these as part of my Spanish Tapas Menu.
Ingredients needed to make
3 large Potatoes
50g Parmesan cheese we wont need all this but it was the smallest size i could find!
Normal cheddar cheese or a cheese of your choice (smoked works well)
2 Eggs
2 teaspoons Butter/ Margerine
Flour ( to coat and help breadcrumbs stick)
Breadcrumbs ( I buy ready made ones in a tub)

How to make
Peel and chop the potatoes and boil them until soft
Whilst the potatoes are still hot Mash in a large bowl until soft and creamy add in the parmesan and grated cheese (according to your taste) add a couple of teaspoons of butter to keep the mash creamy a splash of milk helps with this too.
Place the mash in a bowl and put in fridge to cool for 1 hour

roll the potato into small egg shapes
insert a small piece of cheese into the middle and refold the potato round this
Flour the potato
whisk 2 eggs in jug, then add the floured potato
Roll the egged Potato into a bowl of breadcrumbs
Deep fry the potato until golden then drain onto a piece of kitchen roll
