Carrot and Potato Soup

I cycle long distances and struggle to eat before a big ride, I found soup to be a great light meal for me to take on board before leaving for my ride.

Ingredients
- 600g Of chopped Carrots
- 1KG of diced Potatoes
- 50g Buckwheat
- 50g Pearl barley
- 50g Yellow split peas
- 100g Orange lentels
- 25g Soya mince
- 3 Cloves of garlic
- 90g Quinoa
- Cardamom seeds around 1 tablespoon but adjust to taste.
- Coriander (to taste)
- 2 oxo cubes
Directions to make the soup
The video below gives a full start to finish guide to making the soup. The highlights are as follows:
- Boil the lentils, Pearl Barley, Buck wheat, and Split Peas, basically all the dried ingredients bar the soy mince and quinoa. This is the let them get nice and soft
- Drain off and set to one side (saving liquid)
- Re add fluid to pan, add carrots, potatoes with the cardamom seeds and a good shake of coriander (you can add more coriander at the end when you've blended the soup according to your taste) boil for 30 minutes or until soft.
- Drain the mixture into a bowl setting aside the fluid
- Blend the vegetables adding the liquid slowly until you get the consistency you want.
- Season according to your taste with salt and pepper
