Chicken and Chorizo risotto
Ingredients
1/2 a Chorizo Ring
3 chicken Breasts
1 cup of Risotto Rice
1 pint of Chicken Stock
1 Onion
100ml red wine
1/2 a Chorizo Ring

how to make
Finely dice the onion, chicken and Chorizo. Add the Onion to a frying pan and cook slowly until browned
Add the Chicken to the pan and cook until chicken is almost fully cooked (no pink bits left)
Stir in the chorizo
once cooked empty the pan into a bowl and set the bowl to one side
add the rice to the pan and add 100ml of red wine, cook until wine evaporated. Then add the chicken stock until this is fully absorbed cook rice until soft
re add the Chicken and Chorizo to the pan and cook through. Serve into a large bowl and accompany with a Crusty roll.
