Simple to make Coconut macaroons

I had been making Ice cream earlier in the afternoon, in the recipe you only need egg yolks so I was left with a few egg whites. Not one to waste anything where possible i had the choice on either turning them into scrambled egg for Clio the dog or using them in another recipe, the dog lost out on this time!

This recipe is great as its only 2 stages, add all ingredients to a bowl, mix then bake. Great if like me you have some left overs and want to quickly rustle up a treat. Once baked they will keep for a week or so if you keep them in a sealed container, mine only lasted a few days once my girlfriend saw them!

Ingredients for coconut macaroons

The Below ingredients are whats needed for this recipe. They can be purchased easily from Waitrose by clicking on the images, or via the Tesco Link at the bottome See my Tesco and  Waitrose Page for current offers

1 Tablespoon of plain flour

2 Free Range Egg whites (use the yolks in my Mint Ice cream!)

1 Teaspoon of Vanilla Extract

How to Make the coconut macaroons

In a large bowl add add the ingredients, mix well either with a spoon or get in there with your hands as I did (make sure you've washed them well first!)

Spoon the mixture onto a deep baking tray lined with Grease proof paper, i made 6 piles with the mixture but you could make them smaller if you wanted bitesize pieces, With wet hands form into rounded mounds. Place into a pre heated oven in the middle shelf at 180 degrees for 14 -16 minutes until the macaroons are lightly browned.

  • Allow to cool and enjoy! You can decorate them with a little chocolate if you fancy, I just wanted to eat mine right away!!
