Simple and tasty Chicken Fajitas
Growing up we ate very English foods in our family, sure we had pizza and spaghetti bolognese, but we never had things like curries or Mexican food.
Part of that was not knowing how to make it and the array of cook books not being as vast as it is today, the other is the fear of not liking what you have cooked and sticking to what you know best!

When I was about 20 I went away for the weekend to the girlfriend at the times auntie & uncles, I knew they were both vegetarians so I didn't have a clue what we were going to be fed!
We sat at the table and were presented with what looked like chicken in a bowl with peppers and tomatoes, it was christened Quorn Fajitas. I'd never had quorn up until this point being a meat eater but was up to give any food a go once!
The taste was amazing, the tomatoes and peppers in a smokey sauce, I decided when I was home I was going to re produce this but with meat for the Kimber Family to try.

recipe for chicken fajitas, this serves 2 people
- 2 fresh chicken breasts
- 1 Teaspoon of Coriander
- 1 Teaspoon of Cumin
- 1 Teaspoon of Garam Masala
- 1/2 Teaspoon of Chilli powder (this can be increased if you want it spicier)
- 1 Red Onion
- 1 Green Pepper
- 2 Cloves of Garlic
- Tin of Chopped tomatoes
- 1 Packet of Tortilla Wraps
- Olive oil to cook with
- Guacamole & Sour Cream to serve with in wraps.

How to make Chicken Fajitas
Start by dicing the onion into small cubes/slices and frying in a little oil.
Next up Slice the pepper into thick chunk, don't slice them too thin otherwise they will shrink when frying. Use the Garlic press and press the garlic in with the peppers.
Measure out the herbs and put them in a small bowl
Once the Onions and Peppers have fried add the spices to the pan
Stir in with the onion and pepper and make sure they are well coated with the spices. Dry fry for a few minutes, keep stiring so the onions don't stick
Next up dice the chicken and add to the pan
Cook the chicken until no longer pink and white all he way through.
Add the tin of chopped tomatoes, the sauce will be quite runny so boil off for a few minutes until thickened up.
Add the mixture to a service bowl and serve to the table.
Add sore cream and Guacamole to the wraps
Add the chicken and wrap up from the bottom so the sauce stays in! And enjoy!
